Friday Foodie: Spinach Salad with Warm Bacon Dressing

This is one of my favorites Salad recipes of all time: I first was introduced to this salad at the Chart House restaurant in Malibu years ago but I added the dried cranberries and it changed the flavor completely.

I've included the recipe below HOWEVER if the dressing is too complicated or time consuming then try Girard's Spinach Salad Dressing: Just heat dressing and pour over chopped spinach, mushrooms, hard boiled eggs and dried cranberries - Toss and Serve.

Spinach Salad with Warm Bacon Dressing

Chopped Spinach Salad with Warm Bacon Dressing

Ingredients

  • ½ cup Red Wine Vinegar
  • 1 ½ teaspoon Salt
  • 1 tablespoon Sugar
  • ½ teaspoon dry Mustard
  • 1 ½ cup Vegetable oil
  • 1 ½ teaspoon Olive Oil
  • 3 Hard Boiled Eggs, chopped
  • 3 Bunches Spinach
  • ¼ pound Bacon, minced
  • ½ small Onion, minced
  • ½ pound Mushrooms, chopped
  • ½ cup Dried Cranberries

Instructions

Dressing: Blend vinegar, salt, sugar, mustard. Stir in vegetable and olive oils. Set dressing aside. Chop Hard Boiled eggs and Mushrooms. Cover and set aside. Clean spinach, removing tough stems. Drain on paper towels and pat dry. Chop the Spinach Place leaves in a large bowl.
Or TRY heating GIRARD'S Spinach Salad Dressing

Sauté bacon until crisp. Remove bacon, crumble and set aside. Add onion to drippings in skillet. Sauté until tender. Stir in 1 cup dressing and bring to a boil. Pour over chopped spinach and toss. Garnish with reserved shredded eggs, chopped mushrooms, crumbled bacon and a dried cranberries. Serve with additional dressing and pepper to taste. 
Serves 8
