Friday Foodie: BRUSCHETTA – Tomatoes everywhere...

One of my favorite part about growing up in southern Italy was all the tomatoes. Tomatoes would grow literally anywhere – even on steps leading up to my family home in Aorivola, Italy.

Tomatoes are perfect exactly as they are or…you can make BRUSCHETTA. 

Combine in a bowl the following:

Chopped tomatoes, garlic, basil and red onion (optional) 
Drizzle with Extra Virgin Olive Oil
Add Salt & Pepper to taste 

Mix and place on slices of fresh, toasted, or grilled French Bread. 

Simple, easy and perfect for a summertime side dish or as a meal.

Throwback Thursday: This Day in 1976 – Bruce Jenner wins Gold in the Decathlon at the Montreal Olympics


Earlier this week I wrote about the Special Olympics - but we would not have that wonderful tradition if not for the other Olympics. As an American kid growing up overseas the coolest event was THE Olympics. In our mind is was the United States of America against the World – and the Americans were the most fun to watch – at least to me. In fact, as an Army-brat instead of playing Cowboys and Indians, we played the US against the Soviets and the USSR was our arch rival. The World was a crazy place, life was complicated but Team USA coming from behind to beat the Soviets in the Olympics was something only in the movies. And in 2004 the movie, MIRACLE with Kurt Russell – was the true story of Herb Brooks, the player-turned-coach leading the 1980 US Olympic hockey team to victory over the seemingly invincible Russian squad. Even though it was some of my earliest memories, THAT movie re-played my childhood on-screen and still reminds me what an amazing time is was to be a kid and an American.

Now on THIS day in history it was a different American victory. Most don't remember but July 30, 1976, American Bruce Jenner won the gold in the decathlon at the Montreal Olympics. His 8,617 points set a world record in the event. Although a lot of time has passed, the world has changed, people have changed - I still think it's important to be reminded that sometimes the true victory is in the journey. And those iconic images of Bruce Jenner winning the Gold for Team USA reminds me of an amazing time in history – of hard work and perseverance and perfect to highlight on Throwback Thursday.

Wednesday Women: SUNDANCE'S New Women Initiative

On Wednesday each week - I write about a specific woman or female related organization that is doing good in the world but today I want to share another option.

Being a women in most industries has not always been the easiest road traveled and being a female filmmaker in an industry that has been primarily male dominated can certainly appear to be one of the more difficult paths. However, that has never stopped me - in fact, it has made me work harder.

Today with a bit of research, you can find all sorts of resources available specifically for women. This Women on Wednesday blog post I want to highlight two organizations in my field: WOMEN IN FILM and THE SUNDANCE INSTITUTE.

There are dozens of resources and mentoring programs out there in any field but finding the ones relevant to you can be a hit-or-miss process. Do the research, find what works for you and by all means, please let me know if you come across someone or an organization that is special - I would love to feature them on my Women on Wednesday blog post.

The Sundance Institute has compiled a great many grants, workshops, blogs, archives, film festivals, resource lists and mentoring programs specifically for female filmmakers as part of its Female Filmmakers Initiative Resource Map.

This Female Filmmakers Initiative Resource Map is a database of centralized information and storehouse of the opportunities and programs available to US-based women filmmakers.

One of my favorite events and favorite non-profits is The Special Olympics and THIS year the Special Olympics World Games 2015 will be head in my town of Los Angeles July 25 - August 2, 2015. 

With the start of the World Games TODAY - what better Saturday Study & Learn blog post than to learn a little more about The Special Olympics.

Friday Foodie: Panzanella Bread Salad / Making use of stale bread


Fresh Baked Bread
I love fresh baked bread but I can never finish a whole loaf and then I feel terrible not eating all of it. However, being Italian there are certain things you grow up with; Two of my favorite Italian traditions is never letting anything go to waste and making Panzanella or Bread Salad. 

Bread Salad was once considered a "poor man's meal - a rustic dish, originating from Tuscany and is believed to have developed out of the custom of country folk soaking their old, stale bread in water and mixing it with vegetables from the garden.

Bread Salad is one of my favorite recipes and the perfect way to use a wonderful loaf of bread is hard as a rock. Plus a perfect way to take advantage of all the summertime producer available this time of year. 

Panzanella Bread Salad

Panzanella Bread Salad Recipe
  • Yield: Serves 6-8
NOTE: Leave the crusts on the bread chunks; they will stay chewier and give the panzanella more substance. 


Ingredients

  • 4 cups tomatoes, cut into large chunks
  • 4 cups day old (somewhat dry and hard) crusty bread (Italian or French loaf), cut into chunks the same size as the tomatoes*
  • 1 cucumber, skinned and seeded, cut into large chunks
  • 1/2 red onion, chopped
  • 1 bunch fresh basil, torn into little pieces
  • 1/4 to 1/2 cup good olive oil
  • Salt and pepper to taste
* If you don't have hard old bread sitting around, you can take fresh crusty bread, cut it into big cubes, lay the cubes out on a baking sheet, and put in a 300°F oven for 5-10 minutes, until the outer edges have dried out a bit (not toasted, just dried). If you use fresh bread without doing this, the bread may disintegrate into mush in the salad.

Directions

Mix everything together and let marinate, covered, at room temperature for at least 30 minutes, up to 12 hours. Do not refrigerate or you will destroy the texture of the tomatoes.
Serve at room temperature.

Over the past 10 years I have been in contact with The Women's Information Network or The WIN because of the family-friendly content I created like GINO CUCINO and KRUSING AMERICA. Saturday Study: HelpGuide.org - Strengthening Mental & Emotional Health

I was looking for something to write for my Saturday Study and since it was the one year anniversary of the death of my sweet cat, Rikki - I did a search for "grieving the loss of a pet" and came across this website: HealthGuide.org 

Their mission is to help our readers strengthen their mental and emotional health, build better relationships, and take charge of their lives. They serve over 65 million people a year – free to all, and free of advertising or corporate influences. 

I found some really useful tools not just for grieving the loss of a Pet but for most everything type of situation one might find themselves in…I am also the Consulting Producer on a feature film called NO LETTING GO due out next year based on a true-events about a family dealing with Mental Health issues with one of their 3 sons. 

Today we have more resources so I wanted to share this one on my Saturday Study Blog.

HelpGuide is dedicated to Morgan Segal whose tragic suicide could have been avoided if she’d had the hope that comes with access to better information and the tools needed to balance her emotions and regain control of her life.







Morgan Leslie Segal, died in 1996 at the age of 29. For six years, she grappled with a condition that started as low self-esteem and evolved into major depression. In her last years, Morgan’s only real friend was her laptop. She wrote stories and poems and researched information to try to understand her condition.

The messages she got from both her therapist and the Internet were clear and consistent: the best remedy for emotional problems is antidepressants. She was given a variety of SSRIs and other medications. She stuck with this therapy even as her condition deteriorated. Finally, in desperation, she committed suicide.

Seared Watermelon with Basil, Feta, and Balsamic

Do exactly that:


Food and Food-o-Graphy by Linda Kruse
  • Slice Watermelon into long strips (Approx. 2 inches wide and thick and 4 inches long)
  • Place on hot grill - Sear front and back 
  • Top with sliced basil, crumbled feta cheese and drizzled balsamic vinegar
  • Serve

Throwback Thursday: NO KID HUNGRY: End Child Hunger in America – Summer is the hungriest time of the year!

When I was a child growing up - we would play outside all day and then run into the house and find something to eat. Growing up in an Italian household - there was always enough food to go around. In fact, our house was the place all the kids hung out because my Mom always had enough food for everyone. Today kids aren't as fortunate. The statistics of hungry children in the US are astounding. In fact, 1 out of 5 kids go hungry. 



My friend, Billy Harris of HANGING WITH HARRIS has been involved with the NO KID HUNGRY campaign for years. 

Childhood hunger is a major problem in America, but it is a solvable one. NO KID HUNGRY is building a nationwide network of problem solvers to end childhood hunger and we all should help.
